Raisin bran and orange zest muffins


When you get a request for more of something you’ve got to honor it, right? My family requested more of the orange zest and dried cherry muffins. I couldn’t make it the same. That would be silly being that there are so many other combinations.


I love oranges and when I can incorporate them into a dessert… even better. Chocolate and orange can’t be beat. When I was a kid my favorite ice cream was orange sherbet. Oh and the orange push ups were definitely at the top of the list. Granted they didn’t actually have orange in them. FYI I just looked up the ingredients. Anyway oranges are  nature’s dessert and I really like having them around. As far as my desire for chocolate, it goes without saying.


 Servings 12


  • 2 cups flour
  • 1 cup raisin bran cereal
  • 1 teaspoon baking soda
  • 2 cups applesauce 
  • zest from one orange
  • Juice from one orange
  • 4 tablespoons maple syrup
  • 1 /2 cup chocolate chips


  1. Preheat oven to 375 degrees
  2. Mix together dry ingredients of flour, raisin bran cereal, and baking soda, 
  3. Mix together wet ingredients of applesauce, orange zest, juice from one orange, and maple syrup
  4. Mix together wet with dry ingredients and then add chocolate
  5. Fill tin with baking cups and spray each lightly with canola oil 
  6. Spoon mixture into muffin tin
  7. Bake approximately 20-22 minutes
