No bake oatmeal chocolate chip crumble

This was supposed to be cookies but I thought I would omit the coconut oil in the original recipe so what I got was crumble which is still really tasty. I served it on yogurt and got rave reviews in my house. Next time I might use some dates to help it stick together.

Now I could have decided to start over but this really lends itself to crumble and I’m not fond of throwing away food.

  • 1 cup oatmeal
  • 1 cup sunflower seeds
  • 3 tablespoons agave nectar
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips
  • 1/2 cup dried cherries
  • 3 tablespoons dried coconut

  1. Place half cup oats and all of sunflower seeds into food processor
  2. Blend until sticky about 3-5 minutes
  3. Add agave nectar, vanilla, salt and he rest of the oats and blend again until somewhat sticky about 3-5 minutes
  4. Place mixture in bowl and add chocolate chips, dried cherries, and dried coconut
  5. Mix together ingredients and line a pie pan with wax paper
  6. Place mixture in pie pan and smash down
  7. Refrigerate at least one hour and serve
  8. This will fall apart when you cut into it. If you’re lucky you will have a few good chunks. Hence the name crumble
