No bake oatmeal chocolate chip crumble

This was supposed to be cookies but I thought I would omit the coconut oil in the original recipe so what I got was crumble which is still really tasty. I served it on yogurt and got rave reviews in my house. Next time I might use some dates to help it stick together.

Now I could have decided to start over but this really lends itself to crumble and I’m not fond of throwing away food.

Ingredients
- 1 cup oatmeal
- 1 cup sunflower seeds
- 3 tablespoons agave nectar
- 1/2 teaspoon vanilla
- 1/2 teaspoon salt
- 1/2 cup chocolate chips
- 1/2 cup dried cherries
- 3 tablespoons dried coconut
Instructions
- Place half cup oats and all of sunflower seeds into food processor
- Blend until sticky about 3-5 minutes
- Add agave nectar, vanilla, salt and he rest of the oats and blend again until somewhat sticky about 3-5 minutes
- Place mixture in bowl and add chocolate chips, dried cherries, and dried coconut
- Mix together ingredients and line a pie pan with wax paper
- Place mixture in pie pan and smash down
- Refrigerate at least one hour and serve
- This will fall apart when you cut into it. If you’re lucky you will have a few good chunks. Hence the name crumble
