Salmon and spinach salad

I love making lunch when I’ve just gone shopping. Everything you need is right there and the meal comes together so quickly. Example above

Ingredients

  • 2 cups spinach, rinsed
  • 1 5 ounce package salmon
  • 2 teaspoons greek yogurt
  • 1 lemon wedge
  • 1/2 tomato, chopped
  • 1/2 avocado, chopped
  • handful of cilantro
  • salt and pepper

Instructions

  1. Plate spinach
  2. To a bowl add salmon, greek yogurt, juice from lemon wedge, chopped tomato, chopped avocado, cilantro, salt and pepper
  3. Mix together and serve on top of spinach
