Spinach salad with honey mustard vinaigrette


Isn’t this a gorgeous salad? These colors go great together. Nature has a way of making itself so appealing to me. 

Serves 2


  • 2 cups baby spinach
  • 1 cup carrots, sliced thin with a mandoline or peeler
  • 1 cup corn from cob
  • 2 tablespoons sunflower seeds
  • 1/2 cup grated parmesan cheese
  • 4 strawberries
  • 1 tablespoon olive oil
  • 1 tablespoon honey mustard
  • 1/2 tablespoon white wine vinegar
  • 1 tablespoon water
  • 1/2 teaspoon agave nectar


  1. Rinse spinach and place in bowl
  2. Add carrots, corn, sunflower seeds, and parmesan cheese
  3. Mix carefully and plate
  4. Place strawberries on top and prepare dressing
  5. Whisk together olive oil, honey mustard, white wine vinegar, water, and agave nectar until smooth
