Tuna Melt Quesadilla


There are times when easy is the only way to go. Take this recipe above. It can be made in under 20 minutes if you go store bought tortillas. Now if it’s a leisure day for you by all means make the tortillas from scratch. It takes these quesadillas to a whole new level. 

Serves 4


  • 3 (5 ounce packages tuna)
  • 1/2 cup plain yogurt
  • 1/2 teaspoon cumin
  • 1/4 cup chopped cilantro
  • 1 cup shredded extra sharp cheddar cheese
  • 1/2 cup crumbled queso cheese
  • 8 flour tortillas ( store bought or Homemade Flour Tortillas)


  1. Preheat oven to 400 degrees
  2. Mix ingredients of tuna, yogurt, cumin, cilantro, extra sharp cheddar cheese, and crumbled queso cheese in medium size bowl
  3. Spray oven safe baking tray 
  4. Fill each tortilla with equal amounts of tuna and cheese, fold in half and lay on an oven safe baking tray
  5. Spray tops of tortillas and bake 15 minutes or until slightly browned and cheese melts
  6. Serve with your favorite condiments and a cool beverage
