Baked Pasta with Fresh Mozzarella and Basil

To me the hardest part about making pasta is boiling the water. It seems to take forever. That’s why I try to make a pretty big batch and freeze extra for later. This recipe is quick and easy because I had made the pasta ahead of time.

This dish makes a great lunch or dinner if you add a salad on the side.

I like the way fresh mozzarella melts. It’s stringy and almost chewy which gives it a nice texture.

Serves 3-5

Ingredients

  • 4 cups cooked pasta shells
  • Spray oil
  • ½ of a juice of a lemon squeezed onto pasta equal to 2 tablespoons
  • 2/3 cup shredded fresh mozzarella cheese
  • 1 cup cooked peas
  • ¼ cup fresh basil
  • salt and pepper to taste

Directions

  1. Preheat oven to 400 degrees.
  2. Place pasta in a large bowl with lemon juice, mozzarella cheese, cooked peas, and fresh basil. Mix lightly and place in oven safe dish that has been sprayed with oil.
  3. Bake 20 minutes. Spoon onto plates and serve with fresh grated parmesan cheese, salt, pepper, and additional fresh basil.
