Baked Pasta with Fresh Mozzarella and Basil

To me the hardest part about making pasta is boiling the water. It seems to take forever. That’s why I try to make a pretty big batch and freeze extra for later. This recipe is quick and easy because I had made the pasta ahead of time.

This dish makes a great lunch or dinner if you add a salad on the side.

I like the way fresh mozzarella melts. It’s stringy and almost chewy which gives it a nice texture.

Serves 3-5
Ingredients
- 4 cups cooked pasta shells
- Spray oil
- ½ of a juice of a lemon squeezed onto pasta equal to 2 tablespoons
- 2/3 cup shredded fresh mozzarella cheese
- 1 cup cooked peas
- ¼ cup fresh basil
- salt and pepper to taste
Directions
- Preheat oven to 400 degrees.
- Place pasta in a large bowl with lemon juice, mozzarella cheese, cooked peas, and fresh basil. Mix lightly and place in oven safe dish that has been sprayed with oil.
- Bake 20 minutes. Spoon onto plates and serve with fresh grated parmesan cheese, salt, pepper, and additional fresh basil.
